Croissant Breakfast By Ruan Goosen
The way to my heart is a good buttery croissant. If you can make them from scratch for me, I might even ask you to marry me. For everyone else, here is how I enjoy my croissant breakfast.
Ingredients
1. Croissant Breakfast

2 ready made croissants (from Woolworths or any good bakery)

2 eggs

Salt and black pepper, to taste

4–6 strips bacon

1 fresh avocado, sliced

A handful of fresh spinach or rocket

Optional: mayonnaise, hollandaise sauce, or a sauce of your choice
Instructions
Preheat your oven to 200°C, alternatively you can make it in the airfryer. Slice the croissants in half and place them in the air fryer. Heat for about 10 minutes, until golden brown and crispy.
While the croissants are heating, place a pan over medium heat and cook the bacon until crispy, turning occasionally so it cooks evenly. Remove the bacon from the pan and place it on a paper towel to absorb excess fat.
Lightly beat the eggs in a bowl and season with salt and black pepper. Using the same pan in which the bacon was cooked, add the eggs and cook them gently, stirring to make scrambled eggs, or cook them to your preferred style.
To assemble the croissant breakfast, place the bottom half of each croissant on a plate. Add a layer of fresh spinach or rocket, followed by the sliced avocado. Top with the eggs and crispy bacon, then place the top half of the croissant over everything.
If desired, add mayonnaise, cheese, or your preferred sauce for extra flavor.
Serve immediately while the croissants are still warm and crispy.
