Onion Rings

Crisp, golden, and properly indulgent. It is about crunch, sweetness from the onion, and that moment when the batter shatters just right.


Ingredients

1. Onion Rings

  • 2 large onions, sliced into thick rings
  • 1 cup flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ teaspoon paprika
  • 1 cup cold sparkling water (or cold water)

2. Frying

  • Oil, for deep frying

3. Optional

  • Extra flour, for dusting

Instructions

Slice the onions into thick rings and separate them gently.

In a bowl, combine the flour, baking powder, salt, and paprika. Gradually add the cold sparkling water, whisking until you have a smooth batter. It should be thick enough to coat the onion rings but still light.

Heat oil over medium heat in a deep pan or pot.

Lightly dust the onion rings in flour, then dip them into the batter, allowing any excess to drip off.

Carefully place them into the hot oil and fry until golden brown and crisp, turning if needed for even cooking.

Remove and drain on paper towel.
