Mango Salad

Bright, sharp, and fresh. Sweet mango, crisp pepper, and just enough acidity to keep everything balanced. This is a quick salad that feels light but still full of flavour.


Ingredients

1. Salad

  • 3 ripe mangoes, peeled and thinly sliced
  • 1 red bell pepper, thinly sliced
  • ¼ red onion, thinly sliced
  • ¼ cup fresh basil, thinly sliced
  • ¼ cup fresh cilantro (or rocket, preferred)

2. Dressing

  • Zest of 1 lime
  • ¼ cup lime juice (freshly squeezed)
  • 2 teaspoons sugar
  • pinch of chilli flakes
  • ¼ teaspoon salt
  • 1 tablespoon neutral oil
  • Freshly ground black pepper

Optional:

  • Add a spoon of your preferred salad dressing if you want a softer finish

Instructions

In a large bowl, combine the mango, red pepper, red onion, basil, and cilantro or rocket.

In a separate bowl, whisk together the lime zest, lime juice, sugar, chilli flakes, salt, oil, and black pepper.

Pour the dressing over the salad and toss gently until everything is evenly coated.

Serve immediately, or chill briefly before serving.
